Shirini Kishmishi- Iranian Raisins Cookies


Again another 10th of the month and yes time for our MFB Challenge.This time it's to prepare an Iranian dish.While browsing through their cuisine I found so many rice varieties and Kebabs.And I planned to do Kebab.But suddenly we made a plan to go to India for two weeks as the children have a two weeks break for  Winter.As we didn't go to India for the Summer vacation we that time itself had in mind we'll go during winter vacation,but fixing the date took time...

There was a time when we used to make this snack often during Ramadan.Once at an Iftar party in my cousins house,while she was preparing a similar recipe with eggs suddenly the oil burst and from then on my mother was worried and didn't let us make these,but rarely we used to.But she didn't let us make this on our own ,she did the flipping etc and kept it covered while frying.All in whole she was extra careful while frying egg snacks...

Hello all of you!Got a little busy with Eid.There weren't much relatives to spent Eid time with as most of them were in India.Also there was no big celebrations by any groups as of the condition in Kerala now.Still we had our own guests on the following days of Eid.Within two weeks time the schools will also re-open after summer vacation,then everything will go back to routine.

Caramel Pop Corn/ Sweet And Sticky Pop Corn

I remember when we were young once during our summer vacation in India Ummi prepared Pop corns and every one was like ''Ooh you have bought the pop corn machine eh?''They wouldn't or couldn't believe it was made on stove top in a cooking vessel.It was the time when there weren't any supermarkets nearby in our area and nobody used microwave or any such things.They didn't know about these kernels (other than Corn on the cob) nor did they know how to make this.There were a few bachelor relatives who had eaten Pop Corns but they too didn't know it could be made very easily at home.

We have reached the seventh day of fasting today just like the blinking of the eyes.Soon we will reach the 1st tenth ,then the next tenth and with another blink the last tenth.The month of Shah'ban the prayer on each Muslim's tongue was Allahumma  Ballighna Ramadan...and now on the these 1st ten days it would be seeking for His Mercy,then forgiveness and then Protection from the Hell fire...

There is always a happy face when these 'nadan' (a Malayalam term used for country) food is at the dining table.The broad smile is on none other but my dear hubby's face.To be more specific when the meal is the Malabar type..Pathiris,Ghee rice,Malabar style Chicken curry etc...and this also is one among his very favorites 'Ney pathal'.

Sapota (Chikoo) Pola

Back home in Kerala we have a Chikoo /Sapota tree.It bears such sweet delicious chikoos and this time we were lucky enough to eat them.My brother plucks them and Umma keeps them for ripening.Eating or preparing Milkshakes while we finish one batch the other gets plucked and ripens.And this Pola has been prepared from those tasty ones.

Ariunda/Rice Balls


It's been two weeks after we are back from India but somehow still things have not come to the normal routine.First two days went by cleaning and then storing things brought from India.Ummi had prepared enough snacks for us to take here,but unfortunately we could not carry all due to the heavy luggage and also there was some uncertainty with our flight tickets and that's why could not carry any very fresh ones.

Pathal(Pathiri) Thenga Varuthathu/Sweet Coconut Pathiri

This is my favorite during my college days.I had to travel in two buses from my house to the college and the same while returning back.There were only very few buses that traveled directly,that too not on a fixed time.So in the evening I used to come home exhausted,real hungry.Tea would be ready by the time.And Ummi would make some snacks also ready.But sometimes when there's nothing to eat I search for the left over Pathiris (prepared in the morning which will be in the Casserole or in the fridge which was prepared the previous night for dinner)

Today's recipe is sandwich with a curried chicken filling.During our school days there used to be a Chicken sandwich in our school canteen which had its filling in the form of curry.Waking up late to school means two riyals to school one riyal for sandwich or anything to eat and the other to buy anything for drinking.Mostly I would go for that cold Pepsi and any sandwich.

Spicy Egg Fry/Hard Boiled Egg Fry

We can make so many dishes using eggs,be it Curries,Snacks ,Sandwiches,Rice,Cakes...the list goes on and on...Eggs are a life saver most of the time because it's something always available in the pantry and these fit into any meal.Today's recipe is a very simple tasty and spicy one which you can make in a jiff.It can be used as a side with Dal(Lentils) or Vegetable curries or even as a snack.

Chemmeen Petti/Prawns Stuffed Pancakes - Guest Post For Yummy Food

Today I am doing a guest post for one of my favorite blogger Lubna who blogs at Yummy Food.I was so excited when I got an  invitation to do a post on her yearly Ramadan event 'Joy From Fasting To Feasting' which is on its eighth successful year.Who would say ''no'' to this amazing blogger.
       We have almost reached the end of this Holy month.May The Almighty accept all our ibaadah and forgive us our sins.Hope whatever we have charged ourselves good with this Ramadan, light upon us throughout... Aameen.
      Abu Ayyub (may Allah be pleased with him) reported that the Messenger of Allah (peace and blessings of Allah be upon him) said :"Whoever fasts Ramadan and follows it with six days of Shawwal, it will be as if he fasted for a lifetime."
    With the tight schedule of Ramadan and a maintenance work going around in my house,as mentioned in my previous post,which Alhamdulillah has got over now;I came up with this Chemmeen Petti/Prawns Stuffed Pancakes for Lubna's space.
 During Ramadan apart from Chicken,Beef or Veggies even snacks made with Prawns reach our Iftar table like the Prawns Pakodas Prawns Ada etc...Not too much of snacks are prepared but to please my children there's always a snack at the table.
  Once the filling is ready it's real easy to make this snack.Do visit  Lubna's space for the recipe

Ingredients
For the filling 
Prawns        300 gm
 (Marinate the prawns with 1/4 tsp chilli powder and a little salt.)
Onion              3 (finely chopped)
Ginger paste     1/4 tsp
Garlic paste       1/2 tsp
Green chilli       3 (pasted)
Turmeric powder  1/4 tsp
Garam masala       1/2 tsp
Curry leaves        a few chopped
Salt                 as per taste
Oil                  as needed 
For the Pancakes
All Purpose Flour/Maida   1 cup
Egg Yolks           of 2 eggs
Salt                 to taste
Water            11/2 cup (approx.)
Further Ingredients for frying
Egg Whites       of 2 eggs
Chilli powder    1/4 tsp 
Oil              to shallow fry  
Method  
-Heat oil in a frying pan and shallow fry the marinated prawns.Set this aside.
-Now heat another pan,add 2-3 tsp of oil and add the chopped onion.After a minute add the pasted ginger,garlic and the green chillies.Saute well till the onions turn translucent.
-Add the remaining ingredients and saute.Last add the fried prawns,mix well and turn off the flame.
-Now for the batter,first separate the egg whites and yolks as mentioned in the ingredients.Use yolks for the batter and whites for the frying part.
-In a bowl add the egg yolks,salt and the flour.Add water little by little and whisk this well to form a smooth batter without any lumps.The consistency should neither be too thick nor too thin,so be careful while adding water.
-Place a non stick pan on medium heat.When the pan turns hot(not too hot),grease the pan with a little oil and pour a small ladleful of the batter and immediately swirl the pan and make a thin pancake.Just as the top part dries and the sides leave the pan take it out on to a plate.
-Add a little filling at the center of the pancake and fold all the four sides of the pancake inwards in the form of a small box.
-Repeat the same process with rest of the batter and the filling.
-Now take the reserved egg whites in a bowl,whisk it a little adding the chilli powder.Heat a frying pan and add oil.When the oil turns hot dip each of these filled pancakes in the prepared egg mix and fry till both sides are done.Transfer onto a kitchen tissue.
-Ready to serve.
