After the Chakkakuru fry ,here's another side dish with the seeds.Yes again its with the seeds .I think I am more of a fan of the Jack fruit's seed than this fruit.
I have mentioned how rarely we get this fruit in my previous post. But forgot to mention these are available in plenty in my Aunt's(Uncle's wife) area.So whenever she visits her mom she brings this in bulk and it is distributed to all the relatives. Those are the good ones, very sweet in taste and big pieces, that is; it has big seeds too.So the seeds are treasured.
Today's recipe is a simple stir fry.Now on to the recipe:
Ingredients
Jack fruit seeds/Chakkakuru 11/2 cup(skin removed)
Chilly powder 1/4 tsp
Turmeric powder 1/4 tsp
Salt as needed
Water 1/4 cup
To Grind
Grated Coconut 3/4 cup
Garlic pod 2 nos.
Cumin seeds 1/2 tsp
Green Chilly 1-2
To Temper
Oil 1 tbsp
Mustard seeds 1/4 tsp
Curry leaves a few
Method
-Grind all the ingredients mentioned under 'to grind' and keep this aside.
-Chop the seeds into bite size pieces. Now in a pan add the chopped seeds, chilly powder, turmeric powder, salt and water and cooker till the seeds are done.
-Now heat another wide pan and add oil. When the oil is heated add the mustard seeds, when it splutters add curry leaves and the cooked seeds along with the ground coconut-mix.Stir and mix till well combined.Switch off the flame and serve as a side dish with rice.
