Already the first ten days of Ramadan are over.And as usual the next ten and the last ten would also just fly off.Utilize the best of time for Ibaadah when you are in good health.Circumstances may not be the same always because sometimes I feel I did my Ibaadah  better last year compared to how I feel this year.This year I feel I am in a complete packed shedule because in between I have my Physiotherapy sessions and due to the medication I doze off suddenly every now and then.Otherwise I could spent late nights and early mornings completing my recitation.But then everything is His will.And as believers there is reward on being patient.

Erachi Pola

Today's recipe is another Malabar delicacy 'Erachi Pola'.I prepared this during one of the Ramadan days but couldn't post it due to that months tight schedule.Our Iftar table is filled with dates, water, fresh fruits (salad or juice form) along with one type of snack.The snack part is specially for my little ones.MaShaAllah both of them love to fast without any fuss.They have taken 26, Alhamdulillah I feel really happy and blessed for that.Its not compulsory for their age but we can start preparing them for that without any forcing.Their first question when they enter kitchen is ,"What is for today's Iftar?"

Prawns Pakoda/Chemmeen Pakoda

As I have mentioned earlier in my posts that one of my family's  favorite sea food is prawns.We like the addition of prawns in any recipes like snacks,fillings or curries.This is one such yummy snack which we all love.
Ingredients
Prawns            12-15 large(cleaned)
Onion                 2 large (finely chopped)
Egg white           of 1 egg
Green Chillies     3 (finely chopped)
Ginger paste        3/4 tsp
Garlic paste         1/2 tsp
Curry leaves         a few chopped
Baking powder     1/8 tsp
Turmeric powder   1/4 tsp
APF/Maida         5-6 tbsp(heaped)
Corn flour           4-5 tbsp(heaped)
Salt                    as needed
Water                 as needed
Oil                                  for deep frying

Method
-Clean and wash the prawns well.Cut each into 2-3 pieces(according to the size of the prawns).
-In a bowl add all the ingredients except the prawns and oil.Mix well and make a thick batter.Add water if its dry.(see image below)
-Check the salt and then add the prawn pieces and mix again.
-Now heat oil in a kadayi/wok .
-When the oil turns hot slowly drop this mixture little by little using your fingers.
-Cook till both sides turn golden brown.
-You can serve these with tomato ketchup or any sauce you prefer and of course with a cup of hot tea.

Egg Sandwich


These sandwiches can be prepared easily.Today I made these egg sandwiches for breakfast.It makes a healthy and filling breakfast for kids.Or can be used as a snack when they return from school.So here I go with the recipe...

Ingredients
Bread            10 slices
Eggs(hard boiled)      4
Onion                      4 (chopped)
Green chilly             2 (slit )
Pepper powder        11/2 tsp
Oil                  1 tbsp
Salt                According to taste
curry leaves     2 sprig

Method
-Remove the egg shell and cut the eggs (each half into four pieces)
-Heat oil in a pan.
-Add the chopped onion,green chilly,salt and pepper powder.
-Add curry leaves and saute till onion becomes transparent.
-Remove from fire.
-Now taking one bread slice,spread the onion mix,on top add the egg pieces ,again on top add little onion mix and cover it with another bread slice
-Repeat this with all the bread slices.
-Now place them on the ' Sandwich Maker', till its done.Serve.


*If health conscious,you can remove the egg yolk and just use egg white as filling.
*If you don't have a Sandwich Maker ,you can just heat the bread first on a pan (with or without  butter) and then make the sandwich.
