Today's recipe is sandwich with a curried chicken filling.During our school days there used to be a Chicken sandwich in our school canteen which had its filling in the form of curry.Waking up late to school means two riyals to school one riyal for sandwich or anything to eat and the other to buy anything for drinking.Mostly I would go for that cold Pepsi and any sandwich.
As the kids have vacation now,they get up a little late.In the meantime I prepare something for their breakfast which they like.Mostly all our neighbours have left for vacation and we are also planning to go this week.So its like finishing off things from pantry and refrigerator.Morning when checked found a packet of chicken boneless pieces so thought to make a sandwich filling.Suddenly thought to make this in a curried style but was not sure whether the kids would like.But to my surprise they finished it without any fuss.
Actually I forgot to click before giving the kids,So with the very little filling left I have made these and clicked :)
Ingredients
Bread slices 8
Boneless Chicken pieces 250 gm
Onion chopped 2
Tomato chopped 1
Ginger Garlic Paste 1 tbsp
Turmeric powder 1/4 tsp
Chilly powder (kashmiri) 3/4 tsp
Coriander powder 1/4 tsp
Pepper powder 1/2 tsp
Cumin seeds powder 1/4 tsp
Garam masala 1/2 tsp
Lemon juice 1 tsp
Oil 3 tsp
Salt as needed
Coriander leaves chopped 3 tbsp
Method
-Cook the chicken with a little salt,1/2 cup water and turmeric powder.Once cooked shred the chicken or cut into bite size pieces.Keep the stock for later use.
-Heat a wok and add oil.Add in the onion and saute well.
-Now add in the ginger garlic paste,saute and add the chilly, pepper and coriander powder and mix.
-Now add the tomato pieces and cook till soft.
-Add the reserved stock and when it boils add the chicken pieces and salt.
-When the gravy becomes a little thick add the garam masala ,cumin powder,lime juice and the coriander leaves.When the whole masala coats the chicken well switch off the flame.
-Add this filling on one of the bread and cover it with another bread.Repeat to make four sandwiches.Grill and serve with any juice.
Nice looking sandwich!, we all have our school canteen food memories. :)
ReplyDeleteThat first paragraph really resonated... I used to love it when umma wakes up late and we could get those one or two dhs in our hands... nowadays my kids ask for not less than five! But I still give them around 3 and tell them, Ullathu kondu vaagiyaa mathi! ;) Lovely sandwich that one is, I am not surprised that they finished it off. Have a lovely vacation dear...

ReplyDeleteYum! Some recipes make it to the blog immediately and the memories behind it makes it even more special. For me school canteen was all about chicken spring rolls! 😅 I think it was 5 bucks and we get 10 rupees pocket money. 😆
