Watermelon Rind Stir Fry


Today's recipe is a stir fry more likely you can call it as kootu curry as it has both a lentil and a veggie...a veggie ??Have I used a veggie or has the Watermelon turned veg hehe...It's actually the rind of the Watermelon used in the cooking.

Few years back that is before I started my blog I would have never cooked the rind though I know it has so many health benefits,but never thought of cooking it.But thanks to blogging I have come to know more of so many new ingredients and cooking styles :)
Here I have cooked the watermelon rind along with split Chickpeas(Chana Dal).Mentioning of Chana dal there are other recipes on my blog using Chana dal like the Chana dal Cake and this Ada ...Now on to this recipe
Ingredients 
Watermelon rind(the white part )    2 cups chopped
Split Chick peas/Kadalaparippu   1/4 cup (soaked)
Onion     1 medium finely chopped
Green Chillies   2 slit
Water   1/4 cup
Turmeric powder 1/4 tsp Oil  3 tsp
Mustard seeds  1/4 tsp
Dry red chilly   1
Curry leaves  a few
Salt   to taste
To Grind
Coconut grated    1/4 cup
Cumin seeds       1/4 tsp
Garlic cloves      2

Method
-After cutting off the red part of the watermelon,scoop out if anything left using a spoon.Now peel the green skin of the water melon,wash and chop into small pieces.
-Soak the Dal in water for at least 1/2 an hour or more.
-In a pressure cooker heat oil and add the Mustard seeds.When it splutters and the dry chilly and the curry leaves.
-Now add in the chopped Watermelon rind,turmeric powder,green chillies ,chopped Onion and mix well.
-Add in the drained Chana dal,salt and water.Mix well.
-Now close the lid of the pressure cooker and keep for two whistles on medium flame. 
-Meanwhile grind the Coconut along with cumin seeds and garlic into a coarse paste.
-After two whistles, when the pressure subsides,open the lid of the pressure cooker and add the Coconut paste.Mix well and let it boil.
-Serve with rice.

  1. I have never tried cooking with the rind too... always feel a bit hesitant... the dish looks so delicious, so I think next time I cut up the watermelon, I must try!
