Fried rice is something,mostly loved by all.My younger one prefers such type of rice rather than the normal rice,curry and thorans(stir fry).
So I make such rice in between the week apart from the Friday biriyani.After the effort I take to make something the thing that brings a broad smile on my face is when my family specially my children eat it without any fuss till the end ,when they completely clean the plate to the last bit.This is one such dish that brings satisfaction after the preparation.
This is not the exact version of the restaurant style Chinese fried rice but my version of preparing,something that my family loves.Here I have made this in an elaborate process but usually I do this when I have left over rice or fried chicken.I use fried chicken for this and sometimes when I fry chicken as side for any other dish, I fry in bulk keeping this in mind to use it for the next day's fried rice.Now on to the recipe.
Ingredients
For the Rice(You can use previously cooked-left over Basmati or long grained rice,if not,then follow this:)
Basmati Rice 2 cups
Water 31/4 cups
Salt 1/2 tsp
Oil 1 tsp
-Wash the rice well and soak for at least 20 minutes.Then drain and keep aside.
-In a saucepan boil water with oil.When the water boils add the drained rice and salt.Stir and let it boil on high flame for 2-3 minutes,then cover it with a lid and lower the flame.When the rice absorbs the water flip it and keep covered for 10 minutes.Once the rice is cooked,switch off the flame and fluff it well.
For the chicken fry
Chicken 300 gm (preferably boneless)
Ginger-garlic paste 1/2 tsp
Soy sauce 1 tsp
Salt 1/4 tsp
Pepper powder 1/2 tsp
Chilly powder 1/4 tsp
Oil 3 tbsp
-Clean the chicken well with water and drain.
-Now marinate it with ginger-garlic paste,Soy sauce,salt,Chilly and pepper powder.
-Heat oil in a non-stick pan and fry the chicken pieces till done.Remove from the oil and when cooled shred into pieces.
Egg Omelette
Eggs 2
Pepper powder 1/4 tsp
Salt a pinch
Oil 1/2 tsp
-In a bowl add the eggs,pepper powder and salt,whisk well.
-Heat a non stick pan and spread the oil,pour the egg mix.When the top part gets done flip it.When both the sides are done take out the omelette and cut into small pieces.Keep this aside.
Further Preparation
Oil 1 tbsp (can use the oil used to fry chicken pieces)
Ginger chopped 1/2 tsp
Garlic chopped 1/2 tsp
Onion 1 finely chopped
Capsicum 1 chopped
Carrot 1 chopped
Spring Onion 1/2 cup (white and the greens separately chopped)
Salt if needed
Pepper powder 1/4 tsp
Tomato sauce 1 tbsp
Soy sauce 1 tsp
Method
-Heat a non stick wok and add oil.Now add in the finely chopped ginger and garlic.When it turns golden brown add in the onion.
-Saute for 2-3 minutes and add in the chopped Carrot and the white part of the spring onion.
-When the carrots are done add in the capsicum and the sauces.Add in the pepper powder and mix everything well.
-Now add in one by one of the cooked ingredients.Firstly add half the cooked rice along with the omelette and chicken pieces.Mix well.Check the salt and add if needed.
-Now add in the chopped greens of the spring onion and the remaining cooked rice.
-Switch off the flame and serve.
