Inji Puli /Puli Inji /Instant Ginger - Sweet And Sour Pickle


Today's recipe is an item served as a part of the Sadhya,an instant mixed flavored pickle(not exactly a pickle).The main ingredient is the ginger which helps digestion and the other ingredients tamarind,jaggary and green chillies which brings out the spicy tangy lip smacking flavours.
You can prepare this either by first only sauteing the chopped ginger till crisp ,taking it out and then proceeding with the gravy and lastly adding back the ginger.But I have prepared it in one go and found it easier.Also you can add the jaggery directly to the gravy,but I always prefer straining it and then adding.

Ingredients
Ginger 250 g (finely chopped)
Tamarind 30g (Lemon size  )
Hot Water (to soak tamarind) 1/2 cup
Green chillies  5-6 as per spice level(finely chopped)
Jaggery 110 g
Kashmiri chilly powder  1/2 tsp
Turmeric  1/4
Coconut oil   3-4 tbsp
Curry leaves  a few
Dry chilly  2
Mustard seeds  1/4 tsp

Direction
-Soak the tamarind in hot water for sometime and then squeeze out the extract.Keep this aside.
-Heat jaggery with 1/4 cup water till it melts and then strain and keep aside.
-Heat a wide pan,add oil and splutter the mustard seeds.Then add in the curry leaves and the dry chilly.
-Now add in the finely chopped ginger and Green chillies saute till golden brown and crisp.(When done there is a crispy sound while sauteing the ginger)
-Add the tamarind water.Add the turmeric,chilly powder and salt.Mix well.
-Now add the strained jaggery syrup and mix every thing stirring well on medium high flame.Cook until the gravy thickens.
-Once thickened Off the flame.When cooled transfer into a clean jar.
