Vanpayar Thoran/ Red Cow Peas Stir Fry

Thorans/Stir Fry mostly made in our house are the ones with the Veggies the most of them being Cabbage-Carrot stir fry or each separately,Beans stir fry or veggies that go in that line.Stir fry made with legumes are comparatively less.Thanks to some picky eaters at home :)

This time when in India,Onam celebration was around.During Onam its such a beautiful sight to see all the groceries filled with all types of fresh vegetables and different colored lentils and legumes.
Today's recipe is a simple stir fry or side dish which goes well with rice
Ingredients
Vanpayar/Red Cow peas  11/2 cup (soaked for 2-3 hrs)
Onion  1 chopped
Green chilly  2-3 chopped
Oil   2 tsp
Mustard seeds  1/2 tsp
Salt  as needed
Curry leaves  a few
Grated Coconut 1/4 cup
Method
-Pressure cook the Cow peas with little water for 2-3 whistles.Switch off the flame and allow the pressure go by itself.
-Heat oil in a wok and add the mustard seeds.When it splutters add the onion then the green Chillies and Curry leaves.
-When the onion turns translucent add the cooked Cow peas and salt.
-Now add the grated coconut, mix well and switch off the flame.
