Butter Cake With Orange Flavour/1st Blog Anniversary

Hello friends....Last week was my blog's 1st anniversary...couldn't post anything that day being busy with so many things.In between I had a shoulder pain which enabled me to sit on my PC for long.Now Alhamdulillah I am fine.



How fast the time flies...Looking back,I started this blog just to share food cooked in my kitchen(in mind with the doubt whether I would have any readers) or it was just to keep all my recipes at one place(noted on different books,bits of paper or even behind my children's school circulars..hehe..and also to get rid of all those papers which my hubby finds in between his search for some important papers in his shelf(every now and then he finds my recipes :) ..though with a murmur, he returns it back to me..how nice of him ;)...And today,I am connected to so many blogger friends whom I have never seen or talkedbut all of them having the same interest FOOD whether it be cooking or photography...sharing what one knows with the rest,getting to know different cuisines..some innovative,some traditional or some signature family recipes...
    Today I would like to take this opportunity to thank all my blogger friends, my blog readers and all of them who have supported me this one year.Thank you all for all your support and encouragement through your lovely comments, Facebook likes and messages and expecting the same in future too In Sha Allah.

Now for today's recipe.Its a Butter cake flavored with orange.And again I have done this cake on stove top.

Ingredients
Butter     200g(unsalted and softened)
Sugar(powdered)  11/4 cup
Egg                    3 nos
APF/Maida          11/2 cup
Baking powder   1 tsp
Salt                 2 pinch
Vanilla essence   1/4 tsp
Orange juice       1/2 cup
Orange rind        of one orange
Ghee/Butter        2 tbsp 

Method
-Sieve APF along with baking powder 2-3 times and keep aside.**
-In a bowl add butter,powdered sugar and salt.Using an electric beater,at medium-high speed beat this till pale and creamy.
-In between add the Orange rind and Vanilla essence.
-Now add the eggs one at a time and beat to combine.
-At a low speed,add the Flour mixture**in 3 parts alternating with the Orange juice.Beat for 10 seconds till all are well combined with the butter-egg mixture.
-Heat a non-stick pan, add ghee/butter and grease the bottom and sides well. -Pour the Cake batter,cover it with its lid and cook on low flame for 1 hour or till done. 
-Serve when cooled...this cake tastes best the next day.


*While beating the mixture scrape down the sides for even mixing.
*Do not open the lid while cooking many times, check only after 35-40 minutes.
*Insert a toothpick or a skewer to check whether the cake is done or you can  see the sides of the cake leaving the pan or touch the top part of the cake.

  12. I have the shoulder pain too. I gathered that its due to the hours in front of the computer and was confirmed by my doctor. Still I am continue to sit in front of the computer. Sometimes the pain can be massive and when it happens I slow down a bit.

    The cake is awesome and making me wobble because I love the orange flavor inside.
