Wingko/Wingko Babat-Indonesian Coconut Pancake

Today is the 10th of April - day for the MFB challenge. And the theme is to prepare any Indonesian Cuisine.While checking out on net I came to find out that some dishes were similar to the Kerala food.Like there is a dish called Pisang goreng which is similar to Pazham pori(Banana fritters),Then there is Serabi similar to Ottappam made on clay pans etc.Mostly all dishes whether snacks ,sweets or main cuisine ,there is addition of Coconut milk or grated Coconut.


My recipe for the challenge is a sweet snack,Wingko.A Coconut based Pancake which needs no accompaniment like honey or any sweet syrup.This is not the usual spongy type pancake,where the batter is poured; but a little harder than the usual ones and  is made into a little loose dough and is shaped into rounds between palm of your hand.In some recipes, there is addition of eggs but I made it without eggs.Also in some recipes it's baked in a large size and cut into pieces or sometimes made into mini pancakes on a non-stick pans.
Ingredients 
Rice flour (glutinous)   1 cup (I used unroasted powder)
Grated Coconut  1 cup
Thick coconut milk 1 cup
Sugar  1/2 cup
Salt  a pinch
Vanilla essence  1/4 tsp
Butter  for greasing 

Method
-In a bowl mix together all the ingredients except Coconut milk and butter.Mix well with your hand.
-Now add in the Milk and make a wet dough.
-Heat a non stick pan and grease it with little butter.
-Pinch out a little dough and roll and then shape into a little thick round shape between palm of your hand.Place it on the non stick pan.
-The flame should be in between low to medium.Cook for 7 to 8 minutes flipping both sides till it turns brown and cooked properly.
-Serve warm.

  9. Your pancakes look good. I love pisang goreng which is our local banana fritters. We also have our coconut pancakes and the batter is a bit watery. We pour the batter with a ladle on a non stick pan and the pancakes are softer.

  10. Good one dear! True, I too saw some of those dishes that are familiar to Kerala. Even this one, seems like the pathil but without vanilla essence. :-) Very easy and interesting snack!
